Hello my fellow travellers,
Today’s breakfast recipe is inspired by probiotics. Probiotics are healthy bacteria that our digestive tract need (for more information, here’s a helpful website) and can be found in a number of foods like sauerkraut, non-pasteurized yogurt, and of course kefir!
The brand of Kefir I used.
Kefir is a fermented drink made from kefir grains and is very similar to yogurt although a lot more tart in taste.
This omelette is very delicious and easy to make but requires some attention at the stove. I accidentally discovered this recipe when I looked through my fridge and realized there was a carton of organic kefir that I needed to use before the expiration date. Best accidental discovery ever.

What’s been one of your best accidental kitchen discoveries?
2 tbsp organic kefir
salt, to taste
pepper, to taste
red chilli powder, to taste (optional)
1 tsp flax seed (optional)
1/4 cup bell pepper, chopped
handful bunch of salad leaves, chopped
1 tbsp butter or coconut oil
1. Crack eggs in a medium sized bowl and add kefir. Whisk until well combined.
2. Add all the seasonings and flax seed and whisk well. Add the chopped bell pepper and salad leaves last. Mix together.
3. Heat frying pan on medium and add 1 tbsp butter. Pour batter into pan and let cook for 3-4 minutes and turn down heat to medium-low. Do not flip until you see that the top of the egg is set (not jiggly or breaking apart). Flip carefully and turn stove back to medium heat. Cook for 2 minutes. Easy as that.
